Mole Dulce Recipe


This is one of my favorite Authentic Mexican meals. I remember when I was a kid in school they would ask "write down your favorite food" and I would always write Mole! I was the only Latina in the class so unfortunately the majority of the class had no idea what I was talking about. Here is the recipe and hopefully you'll enjoy it as much as I do.

4 Chile Ancho
2 Chile Pasilla
2 Chile Mulato
1/4 cup of sesame seeds
1 cup of shelled and peeled peanuts (you can replace with almonds if you want.)
1/4 cup of shelled sunflower seeds( you can replace with pumpkin seeds if you want.)
1/4 cup of chile seeds
2 garlic wedges
3 Cloves
1/2 tbls of pepper
2 bay leaves
1 tsp of Cinnamon
2 Tomatillos
1 abuelita brand hot chocolate tablet.
2 hard rolls
2 tbls of vegetable oil

First rinse, de-vain and seed the chiles but keep the seeds. Soak the chiles in warm water. In a separate bowl soak the Abuelita chocolate tablet in 1 cup of warm water. While the chiles are soaking... toast the sesame seeds, peanuts or (almonds), sunflower seeds or (pumpkin seeds shelled), and chile seeds. Roast the tomatillos... set aside. Grab your soaked chiles and the water they are in and put in a blender. Blend for 2 minutes then pour the sauce through a sifter into a mixing bowl. Rinse the blender and pour the sifted sauce back into the blender and add garlic, cloves, sesame seeds, sunflower seeds, peanuts, toasted chile seeds, pepper, bay leaves, cinnamon, and tomatillos. blend for about 1 minute. Add dried rolls (or dried bread slices) and crush into bread crumbs. Add bread crumbs into the blender also add the semi soaked chocolate tablet into the blender and blend for 2 minutes. In a large pot put in 2 tbls of vegetable oil and heat at med high then once heated pour in blended sauce and heat until it comes to a rolling boil. (if the sauce is to thick add a cup of water to make a smoother sauce). Then your Mole sauce is ready to pour over Chicken and Spanish Rice. Enjoy :)
