Enchilada
Sweet Pork

I have always been searching for the right mixture of sweet and spicy. I finally found the right ingredient to give it that perfect sweetness and I owe it all to my Coca-Cola addiction! The spicy well youcan't go wrong with enchilada sauce and Cajon seasoning. These ingredients will give any choice of meat Sabor!
1 Crockpot
3 lbs Shoulder/butt pork
4 Tablespoons Cajon Seasoning
1 Tablespoon Cayenne pepper
1 Tablespoon Black pepper
1 Tablespoon Garlic powder (or minced garlic)
3 Tablespoons Brown sugar
1 Tablespoon Salt
1 can Coca-Cola
1 can red enchilada sauce
In a crockpot put in the pork. Set crockpot heat to high. In a separate bowl add the Cajon seasoning, Cayenne pepper, black pepper, garlic powder (or minced garlic), brown sugar and salt. Coat the pork with the seasonings you placed in the bowl. Add your 1 can of Coca-Cola. After 6 hours of the pork cooking in the crockpot take out about 2 cups of the liquid in the crockpot. Once that is done add in the 1 can of enchilada sauce. Keep cooking for 2 more hours. After the 2 hours serve in a salad, sandwich or as my husband likes it, by itself. Probecho! :)
